I am thinking of doing a trip ex Chiang Mai and visit this three towns. Is it worth visiting or is there nothing special around there?

Amazing roads around Nan.. Proper world class riding Roads.. Not a lot to do after dark.. Phrae and Phayao even more so..

For the riding and country yes.. for bars or even restaurants etc.. Less so..

More of the journey than the destination with all 3 of those ... agree with Sef that towns themselves not up to much.

Agreed that Sef hit the nail on the head. It's riding to those places that's amazing, not really the places themselves. That said, one of the great things about riding in the north is that if you're keen, when you hit those small towns you can always find some place with the christmas lights on the wall... or a club with FL's... either it will be very obvious or only takes one or two inquiries.
